crash hot potatoes

One day, we had a pack of leftover King’s Hawaiian rolls (the grocery store includes them in their fried/rotisserie chicken meals), so we decided to make slider burgers.  Needing a side dish, I was inspired to make the Pioneer Woman’s Crash Hot Potatoes.



Crash Hot Potatoes

Small round potatoes (I used red potatoes)
Olive oil
Salt, pepper, and any herbs you may like
Topping Ideas:
Shredded cheese
Green onion
Bacon
Sour cream

Preheat oven to 450 degrees.  Boil potatoes in salted water until mashable.
Spray cookie sheet with olive oil and place potatoes on sheet, leaving plenty of space in between.  Use a potato masher to squish the potatoes in both directions (like when making peanut butter cookies).  Spray potatoes with more olive oil and add whatever herbs and spices you are using. Bake for 20-25 minutes until golden brown.
We ate ours with shredded cheese and sour cream as that was what we had on hand, but I suggested other toppings above, as well. :)
